Any one should be able to get married!

I don’t understand why people are still fighting against gay marriage. Why? What purpose does it serve? How does it effect your life if two people of the same sex get married. I had the honor of seeing one of my best friends marry his partner in NYC. They are living in Australia right now because his husband cannot get citizenship as a spouse. Who is it to anyone to keep these two apart? Love is love is love. It was not long ago that my parents marriage or my marriage was illegal. My father and husband are both caucasian and my mother is african. I can’t wait to look back and say how stupid it was to have DOMA. Live and let live.

Spinach and Feta Stuffed Chicken

photo-51 lemon

olive oil – about 1/4 cup

2 garlic gloves – minced

scallions- chopped

chicken breast- pounded out thinly

baby spinach

feta

Put the zest and juice of the lemon, scallions, garlic, olive oil and pounded out chicken breast in a large plastic bag or dish to marinate at least 30 minutes. Preheat oven to 375 degrees. Take the chicken breast and put a small handful of spinach and about an ounce of feta in the middle. Fold the chicken over and secure with toothpicks. Salt and Pepper to taste. Bake about 40 minutes. We enjoyed it topped with tzatziki sauce.

Please excuse the pictures. I started eating before I remembered to take them.

I was trying to figure out a side dish. I had a ton of baby spinach. So I sauteed some chopped tomatoes and baby spinach in olive oil. Once the spinach had wilted, I added in a fig balsamic vinegar. Then I let the balsamic cook down a little. It came out AWESOME! I highly recommend it!

Wonderful idea for the kiddies!

photo (2)I found this idea on pinterest. You put some washable paint in a freezer ziploc bag and then tape to a table. I used painters tape for easy removal. It is best to put a white piece of paper underneath, so you can really see the contrast. In one I just used orange paint. The other I put blue and yellow. This way Aiden could see how the colors mix to make green. He had fun running his trucks over the paint too! Best part no mess (unless a bag rips of course)!

Get out of your comfort zone!

I just bought tickets for my husband and I to go see Dropkick Murphys tomorrow night. This is normal for him not for me. I am not a punk kind of girl at all. I can’t wait to see what this night has in store for us. I will update on Tuesday on how it went!

Update. That could have been by far the most fun I have ever had at a concert! The Dropkick Murphys are full of energy and just want everyone to have a good time. I am so happy I went. My husband was over the moon that we got the tickets to the sold out event. There was a little bit of a bother at the show. The show was at the 9:30 Club in Washington DC. We were upstairs on the balcony which has three tiers of seat/standing. The place is general admission. My husband and I staked out our spot and waited. Two older couples came about 20 minutes after and stood right in front of us. There is only one row of people per tier, but these women decided to stand a foot in front of my husband and I. They did not let me and my husband have a bad time. We kept dancing and having fun!

Frustrations!!!!!

Due to my slacking on strength training in my legs, I have developed ITBS. It is fine most of the time except anytime I go downhill. Now this wouldn’t be such a big deal, but I am in the middle of training for a half marathon! An injury right now is like telling me I lost my job or my dog died. I am feeling defeated. So much time and effort has been put into this training. I cannot give up though. The half marathon is 11 weeks away. This means for the next 3-6 weeks my mileage has to be cut down and the stretching and strength training must be increased. I have no choice. I must do it!
