Spinach and Feta Stuffed Chicken

olive oil – about 1/4 cup

2 garlic gloves – minced

scallions- chopped

chicken breast- pounded out thinly

baby spinach

feta

Put the zest and juice of the lemon, scallions, garlic, olive oil and pounded out chicken breast in a large plastic bag or dish to marinate at least 30 minutes. Preheat oven to 375 degrees. Take the chicken breast and put a small handful of spinach and about an ounce of feta in the middle. Fold the chicken over and secure with toothpicks. Salt and Pepper to taste. Bake about 40 minutes. We enjoyed it topped with tzatziki sauce.

I was trying to figure out a side dish. I had a ton of baby spinach. So I sauteed some chopped tomatoes and baby spinach in olive oil. Once the spinach had wilted, I added in a fig balsamic vinegar. Then I let the balsamic cook down a little. It came out AWESOME! I highly recommend it!
