Amazing Recipe that I had to share!

With a new attitude towards life, I am trying to eat better. My husband and I have decided to go vegetarian. I found this amazing recipe that I wanted to make sure I didn’t lose.

imageWe didn’t add curry purely because we didn’t have any. But it came out delicious. I also used 4 whole eggs instead of 6 egg whites because I didn’t want to waste the yolks.

Spinach and Feta Stuffed Chicken

olive oil – about 1/4 cup

2 garlic gloves – minced

scallions- chopped

chicken breast- pounded out thinly

baby spinach

feta

Put the zest and juice of the lemon, scallions, garlic, olive oil and pounded out chicken breast in a large plastic bag or dish to marinate at least 30 minutes. Preheat oven to 375 degrees. Take the chicken breast and put a small handful of spinach and about an ounce of feta in the middle. Fold the chicken over and secure with toothpicks. Salt and Pepper to taste. Bake about 40 minutes. We enjoyed it topped with tzatziki sauce.

I was trying to figure out a side dish. I had a ton of baby spinach. So I sauteed some chopped tomatoes and baby spinach in olive oil. Once the spinach had wilted, I added in a fig balsamic vinegar. Then I let the balsamic cook down a little. It came out AWESOME! I highly recommend it!

Homemade Broccoli Cheese Bites for the kiddies

Super easy to make…

16 oz package of frozen broccoli thawed. I steamed fresh broccoli

1 cup mozzarella

1/2 cup cheddar cheese

1 cup bread crumbs

3 eggs

Salt and pepper to taste.

Preheat oven to 375 degrees. Mix all the ingredients and form into small patties. I laid parchment paper down on my cookie sheet for easier clean up. Bake 15 minutes and flip. Bake an additional 10-15 minutes.

ENJOY!!!

Sweet potato and kale salad. Delish!!!!!

This salad is amazing!!! It sounded a little iffy but OMG!

Baked 2 sweet potatoes cubed with EVOO and salt and pepper. In the mean time, caramelize one onion. Should take about 15 minutes. Add garlic for one minute and then a bunch of kale torn into bite size pieces. Saute until tender. After all ingredients have cooled, mix and add 2 tablespoons of red wine vinegar.

YUMMMMMM!!!!

Healthy Junk Food

Today I made the healthiest junk food I could make. We had buffalo cauliflower bites and veggie pizzadillas. They were a hit!!! My son devoured the pizzadilla and my husband loved them both. My mother even enjoyed it, and she is a very picky eater. I definitely feel like a sorceress dishing out happiness!!!

Now the buffalo cauliflower bites were just battered cauliflower baked in a very hot oven then brushed with buffalo sauce. I then made my own blue cheese dip. The pizzadillas were super simple, with whole wheat tortillas, pizza sauce, mozzarella, veggies and a hot skillet!
